Fatty acid profile

The sample is reacted with methanol in the presence of a catalyst to form the methyl esters. These are injected onto a suitable chromatographic column which splits the ester mixture into its various fatty acid components.

Significance of result
A very powerful tool. This method is used to determine the quantities of each individual fatty acid which make up the overall composition of the oil. It can be used as an identification aid and also to determine the composition of vegetable oil mixtures.
